It is hard to believe that 2014 is just about over and 2015 is around the corner. Although I only started this blog nine months ago, I thought it would still be fun to look back on “the year” and re-visit the recipes that were the most popular.
Easy Fish Tacos with Homemade Pico de Gallo – Fish tacos that are healthy, tasty, and easy enough to make during the week.

Vietnamese Grilled Chicken with Rice Vermicelli Noodles – Chargrilled marinated chicken on a bed of rice vermicelli noodles, fresh vegetables and herbs then topped with a classic Vietnamese dipping sauce. This is freshness in a bowl.

Vegetable Alfredo Lasagna – Healthy vegetables tucked under layers of melted cheese, creamy béchamel sauce, and pasta.

Roasted Chicken Banh Mi Sandwich – Vietnamese banh mi sandwich made easy using rotisserie chicken. Pickled carrots, cilantro, and crunchy baguette keep it traditional.

Chocolate Soufflé {low-fat} – Rich, chocolaty and low-fat. With fewer than 130 calories per serving, you can have two desserts!

Lemon Pasta with Salmon – Pasta with salmon in a light cream sauce – a great way to use up leftover salmon.

Lemon Tart – Classic lemon tart with a lemon curd filling in a buttery tart shell with a hint of coconut.

Chocolate Pudding – Real cream, good chocolate, and cocoa powder make for the best homemade chocolate pudding. Perfect for a tasty snack or fancy dessert.

Moroccan Chicken – Paprika and cumin add deep flavor to flavorful chicken thighs. Serve with warm pita or naan, feta, and mint for an easy Persian inspired meal.

Cheddar Dill Puffs – Based on the French gougère, these cheese puffs are slightly crispy on the outside and light and airy on the inside.

Mahi-mahi with Thai Coconut Curry Sauce – Roasted mahi-mahi served with a Thai inspired sauce of coconut milk and red curry paste.

Chocolate Strawberry Mousse Cake – Chocolate cake filled with fresh strawberries and chocolate strawberry mousse and covered in chocolate ganache.
