Now that the weather is getting nicer here and the pandemic-that-shall-not-be-named is easing, I’m ready to add gatherings, cook outs, and dinner parties back to my calendar. And because I miss talking to people in person, I definitely don’t want to be stuck at the bar or in the kitchen muddling strawberries, mint leaves, and sugar in individual glasses for strawberry mojitos while everyone else is socializing. I’m guessing you would rather be sipping (and not mixing cocktails) too.
Enter the perfect party starter – the strawberry mojito cocktail mixer. It’s kinda like the mixers you buy in bottles to mix with your favorite spirits but fresher and tastier and made with real fruit.
Tips for easy prep
- If the thought of squeezing enough limes to get 2 cups of fresh lime juice discourages you from making pitcher mojitos, check out the produce section of your grocery store for fresh squeezed juice. Chances are if they offer fresh squeezed orange juice, they offer fresh lime juice as well.
- The strawberry mojito mixer can be made ahead of time and stored in the refrigerator for up to 4 days. The mixture will separate so give it a quick stir before using. You can also freeze the mixer for several weeks. Allow the mixer to thaw completely in the refrigerator before using.
No cook simple syrup
Traditionally, a classic mojito would require muddling sugar with mint leaves and lime juice in a cocktail glass. However, I’m a big believer in using simple syrups (especially flavored ones) when making cocktails. A standard simple syrup is equal parts sugar and water gently cooked together until the sugar is dissolved.
This recipe doesn’t require any cooking because the sugar gets dissolved when it’s blended with the strawberries, mint leaves, and lime juice in the blender. No cooking is not only easier it also means that the mixer can be used right away or chilled for use later.
It’s basically ready to party when you are.

Ingredients
For the strawberry mojito mixer
- 16 ounces ripe strawberries, washed and green tops removed
- 1 1/2 cups granulated sugar
- 2 cups fresh lime juice (see Note 1)
- 4 cups fresh mint leaves and tender stems, loosely packed
For a pitcher
- 1 to 1 1/2 cups white or light rum
- 3 cups sparkling water, chilled
- Mint sprigs and halved strawberries for garnish, optional
Instructions
For the strawberry mojito mixer
- Blend. Add strawberries, sugar, lime juice, and mint leaves to a blender and blend together for about 30-60 seconds until the sugar is dissolved and the mint leaves are finely chopped.
- Strain. Strain the strawberry mixture through a fine-mesh strainer. Discard solids. You should have about 4 cups of strawberry mojito mixer. If not using the mixture right away, store it in the refrigerator until ready.
For a pitcher
- Mix. In a pitcher, stir the mixer and rum together until combined. Gently stir in the sparkling water just before serving.
- Serve. Pour the mojito into glasses filled with ice. Garnish with mint sprigs and strawberries and serve immediately.
Notes
- For easier prep, check out the produce section of your grocery store for fresh squeezed juice.
- The strawberry mojito mixer can be made ahead of time and stored in the refrigerator for up to 4 days. The mixture will separate so stir it before using if you won’t be using it all at once.
- For a single cocktail, mix 1/2 cup mixer with 3-4 tablespoons rum and 6 tablespoons sparkling water.
- To make a non-alcoholic mojito, omit the rum and replace with extra sparkling water.
