Remember holiday gatherings? Catching up with friends, getting dressed up, sipping cocktails from pretty glasses. I miss it. Obviously, the gatherings won’t be the usual fare this year but that doesn’t mean we still can’t enjoy a good holiday cocktail to get in the spirit of the season.
Unlike other cocktails I’ve posted like the Blueberry Lemon Drop or the Pear Rosemary Cocktail, this sparkling ginger pomegranate mocktail is alcohol free so everyone gets to enjoy it.
How to make simple syrup
Basic simple syrup is very easy to make. It involves mixing together equal parts granulated sugar and water, bringing the mixture to a boil, lowering the heat to a low simmer then stirring for 1-2 minutes until all the sugar is dissolved.
Heating the mixture helps the sugar dissolve so there is no grainy texture when it’s mixed into drinks but it’s important to not let the mixture stay at a high boil. We want to make syrup not hard candy.
In this recipe, heating the mixture also allows for the ginger to really infuse into the syrup and add flavor to the pomegranate mocktail.
Party Ready
If and when you’re ready to host your next cocktail party, keep this recipe on hand. The recipe easily doubles and triples. The drink base of ginger simple syrup, pomegranate juice, and fresh lime juice can also be mixed up in a pitcher before hand and kept chilled until party time. Then just pour the pomegranate mixture into serving glasses and top with ginger beer (Fever Tree is my favorite).
Not having to mix individual drinks means you get to have fun too. And don’t we all deserve that right now?

Description
Inspired by the Moscow Mule cocktail, this sparkling nonalcoholic drink features a ginger infused simple syrup, pomegranate juice, and ginger beer.
Ingredients
For the ginger simple syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 tablespoons sliced fresh ginger
For the mocktails
- 3/4 cup ginger simple syrup
- 3/4 cup unsweetened pomegranate juice
- 3/4 cup fresh squeezed lime juice
- 1 1/2 cups ginger beer (I use Fever Tree)
- Fresh mint or lime slices for garnish
Instructions
For the ginger simple syrup
- Heat: In a small saucepan, stir together the sugar, water, and ginger; bring to a boil over medium heat. Reduce heat to a simmer and stir until the sugar is dissolved, 1-2 minutes. Turn off heat.
- Steep: Cover the saucepan and let steep for 15-20 minutes.
- Strain and chill: Using a slotted spoon, strain out the ginger pieces and discard. Chill the simple syrup until ready to use (see Notes). You should have about 3/4 cup simple syrup.
For the mocktails
- Stir: In a mixing glass, stir together the simple syrup, pomegranate juice, and lime juice.
- Serve: Divide the pomegranate mixture among 3-4 glasses and top each glass with the ginger beer. Garnish with fresh mint or limes slices and serve.
Notes
- To quickly chill the syrup, put the saucepan into a bowl of ice-water being careful not to get any water in the pan. Stir the syrup until it is cold.
