Description
This strawberry mojito cocktail recipe is perfect for when sweet strawberries are in season. Make a single cocktail or serve up a whole pitcher with this easy method of making the mojito mixer in a blender beforehand.
Ingredients
For the strawberry mojito mixer
- 16 ounces ripe strawberries, washed and green tops removed
- 1 1/2 cups granulated sugar
- 2 cups fresh lime juice (see Note 1)
- 4 cups fresh mint leaves and tender stems, loosely packed
For a pitcher
- 1 to 1 1/2 cups white or light rum
- 3 cups sparkling water, chilled
- Mint sprigs and halved strawberries for garnish, optional
Instructions
For the strawberry mojito mixer
- Blend. Add strawberries, sugar, lime juice, and mint leaves to a blender and blend together for about 30-60 seconds until the sugar is dissolved and the mint leaves are finely chopped.
- Strain. Strain the strawberry mixture through a fine-mesh strainer. Discard solids. You should have about 4 cups of strawberry mojito mixer. If not using the mixture right away, store it in the refrigerator until ready.
For a pitcher
- Mix. In a pitcher, stir the mixer and rum together until combined. Gently stir in the sparkling water just before serving.
- Serve. Pour the mojito into glasses filled with ice. Garnish with mint sprigs and strawberries and serve immediately.
Notes
- For easier prep, check out the produce section of your grocery store for fresh squeezed juice.
- The strawberry mojito mixer can be made ahead of time and stored in the refrigerator for up to 4 days. The mixture will separate so stir it before using if you won’t be using it all at once.
- For a single cocktail, mix 1/2 cup mixer with 3-4 tablespoons rum and 6 tablespoons sparkling water.
- To make a non-alcoholic mojito, omit the rum and replace with extra sparkling water.
