Frozen Mint Lemonade - Incredibly easy to make and tastes like a cool breeze, this lemonade will be your favorite summer drink.

Easy breezy. That’s the best way to describe this frozen mint lemonade. It’s incredibly easy to make and it tastes like a cool breeze – making this my go to drink for this holiday weekend.

My husband first had this lemonade in the Middle East when he was traveling there regularly for work. When you’re in a desert climate refreshing drinks are a requirement so you can find this offered at every restaurant throughout the region. It isn’t called lemonade though. It is usually just listed in English as “lemon with mint”. The first time I saw it on a menu, I assumed it was water with a lemon wedge and a sprig of mint. I was happy to discover that it was a tall glass of cold minty lemonade instead. There are different variations but we’re particularly fond of this slushy-like version.

Frozen Mint Lemonade

Ingredients

For the simple syrup (makes 3 cups)

  • 2¼ cup granulated sugar
  • 2¼ cup water

For the frozen lemonade

  • 1 cup simple syrup
  • 1 cup cold water
  • 1 cup fresh lemon juice
  • about 20 fresh mint leaves
  • 2 cups crushed ice (ice from Sonic Drive-in works great)

Instructions

For the simple syrup

  1. Add the sugar and water to a small saucepan.  Heat over medium heat, stirring as needed, until the sugar is dissolved. 
  2. Cool to room temperature before using. 

For the frozen lemonade

  1. Add simple syrup, cold water, lemon juice, mint leaves and ice to a blender.  Pulse to break up ice and then blend until slushy.
  2. Pour into glasses and serve immediately.

Notes

Extra simple syrup can be refrigerated for 1-2 months.
